The Beer
At Big Skies we produce our Black IPA using a base malt of Maris Otter and adding several roasted malts to provide depth, colour and a wonderful array of complex flavours. The hop lineup is impressive, sporting centennial, chinook, columbus and challenger during or after the boil, before dry hopping some days later with mosaic and perle. Of course, legend has it that IPA was a pale ale aggressively hopped to preserve the cargo on its voyage to India. Many perils lay ahead, but if this Black IPA were to have been on board, thankfully being ‘Deep in the Doldrums’, would not have been one.
The Brewery
Born during the lockdown of 2020, Big Skies Brewing Company is Lincolnshire’s newest and smallest commercial brewery. It was created to deliver exceptional beer by blending traditional methods with modern day equipment. We brew our beers with only the finest and freshest ingredients, sourced locally wherever possible. We strive to brew honest beers without the need for freezing or pasteurising, resulting in products that are driven by quality not profit.
