The Beer
This recipe was crowned the victor in Nottingham’s Hop Idol comp. The Brew Day team were lucky enough to sit on the judging panel and saw this entry beating off stiff competition from around Notts. Salli’s beer won first place and has been turned into a commercial beer with Totally Brewed Beer Co. This will be available at the Nottingham Beer Festival in 2021.
“Low wit and high aromatics make for a well balanced Belgium classic! This award winning (scored 43/50, thank you for asking) traditional white beer recipe has no nonsense grist, overlayed with earthy Saaz hops and spice driven yeast. Fermenting high allows a delicate clove profile to marry seamlessly with coriander, pink peppercorn, juniper berries, and complex lavatory notes. Do your elders proud by allowing the fermentation to peak naturally around 23 degrees, then stabilise at 21 for the rest of it’s flavoursome journey. Enjoy!
Salli used RO water on his and adjusted to style. If you are into chemistry then a Witbier water profile was targeted.
The Brewer
Salli is a local home brew legend involved in the Place To Brew collective. As a local home brewing club and venue P2B has become synonymous with the passion and skill of the Notts home brewing scene. Salli fits this mantra perfectly. Often experimenting and pushing the boundaries of what’s achievable on a home brew scale. One to watch? By the standard of his beers, we’d say so!
