Description
This all grain kit was developed with local nano brewery Grumpy Fish. As a special brew for one of their stockists we came up with a truly outrageous recipe. A. mixture of T90 and Cryo hops backed with not one but two hop stands. A traditional kettle stand and a secondary infusion using Incognito Co2 hop extract. The beer went down a storm and here’s your chance to have a crack at brewing it!
A modest amount of extra equipment will be required. A vessel capable of holding approx 3l of wort for secondary infusion. As with all hop forward hazy beers a process that minimises o2 ingress will necessary. Although the kit does come with ascorbic acid and metab to improve shelf life and dissolved o2 levels
Malt bill: A base of Maris Otter Extra Pale and Golden Promise, layered with oats, barley, dextrin malt and spelt to build body, protein and that signature haze. Mashed at 71c
Hops: Nectaron, Mosaic & Citra (T90 in the whirlpool, Cryo in the dry hop Yeast: Haze Heaven from WHC Labs Plus something new: dip hopping with BarthHaas Incognito.
Dip Hopping is a fresh technique we’ve been experimenting with — Invented by our friends over the pond this involves creating a concentrated secondary steep of wort with Incognito, then blending that back into the fermenter alongside the conventional whirlpool wort. This approach supercharges the beer with layers of aroma and flavour that you just don’t get from a standard whirlpool addition.
The result? A soft, hazy pour that’s overflowing with tropical fruit, citrus and stone fruit, with a depth and saturation that makes every sip pop.
